Learn how to make perfect spongy dhokla step-by-step using just your pressure cooker! 

You'll need: besan (gram flour), curd, ENO, lemon, turmeric, oil, mustard seeds & green chili. 

Mix 1 cup besan + ½ cup curd + water. Whisk well till smooth. Let it rest for 15 minutes. 

Add ENO + 1 tsp lemon juice. Mix quickly. You'll see the batter rise instantly—pour into a greased plate. 

Add water in cooker base. Place a ring/stand. Heat for 3 mins. Don’t use the whistle! 

Place the batter-filled plate inside. Steam covered for 15–18 mins on medium flame. 

Insert a toothpick. If it comes out clean, your dhokla is ready. If not, steam 2–3 mins more. 

Heat oil + mustard seeds + curry leaves + green chili. Pour over hot dhokla for that flavor punch! 

Let it cool slightly. Cut into squares. Garnish with coriander & coconut (optional).
